Quick Farmers’ Market Dinner

All of the main ingredients for this dish came for the Arlington Farmers Market and it was easy to prepare, light, and featured my favorite summer food–big, beautiful Heirloom tomatoes.  Since the sauce is cooked quickly  you can still see all of the colors of the tomatoes shining through.  Congrats to one of my favorite farms, Kimball Fruit Farms, for their BIG win in the Massachusetts best tomato contest held last week.

Heirloom Tomato and Shrimp Sauce
3 -4 large Heirloom Tomatoes of different color and variety
1 Onion
1 Green Pepper
1 lb Fresh Shrimp
1 TBS Olive Oil
Salt and pepper to taste
One pound pasta-any variety

Roughly chop tomatoes, onions, and green pepper
Clean the shrimp and set aside
Boil pasta and drain
Heat olive oil in a large deep saute pan
Add onions and saute briefly
Pour remaining chopped vegetables into the pan
When the sauce starts to bubble, add shrimp
Cook until shrimp is pink and cooked and vegetables are soft.
Add salt and pepper to taste
Serve immediately over cooked pasta
